Strawberry Muesli Parfait with Greek Yoghurt

This Parfait is perfect for all your shenanigans. This strawberry parfait recipe combines fresh fruit, Greek yoghurt and crunchy muesli for an easy breakfast or dessert. Try it in a mason jar for a visual treat along with the fruity surprises.  

Ingredients

  • 2-3 cups strawberry muesli
  • 2 cups uncooked old-fashioned oats
  • 1 cup sliced or shredded coconut
  • 1/2 cup sliced and roasted almonds 
  • 1/2 cup roasted sunflower seeds 
  • 1 tbsp flax seeds 
  • 1/2 cup butter or coconut oil
  • 1 tsp chia seeds (soaked in 4 tsp. of water)
  • 1/2 cup honey
  • 1 cup Greek yogurt 
  • Dark chocolate chips
  • 1/2 cup Sliced green apple 
  • 1/2 cup sliced kiwis
  • 1/2 cup pomegranate
  • 1/2 sliced strawberries or raspberries

 Process

  1. Take the first 6 ingredients in a deep bowl and mix well.
  2. In a microwave melt the butter for 30 seconds to 1 minute. 
  3. Add the honey to the warm butter and stir well. 
  4. Combine this mixture with the oats and muesli mixture and stir well. 
  5. Preheat an oven for 10 minutes at 180 degrees. Spread the above mix on a baking sheet and bake for 15 minutes at 160 degrees till it's golden brown.
  6. After it completely cools down, break it into pieces and store in an airtight container.
  7. When serving, assemble in a deep dish placing the whipped Greek yogurt in the bottom. Add a layer of the strawberry muesli, then the chopped fruits and some dark chocolate chips. Repeat one more time.
  8. Enjoy this wholesome healthy guilt free dessert chilled.
  9. Garnish with the chia seeds.
