A recipe for any and every day! Closer to a fruit salad, than a kale salad, this recipe is versatile and works well for any meal of the day. A light and healthy salad for your every mood.
Ingredients for salad:
- Green Kale - 3 cups
- Mixed fruit Muesli - 2 cups
- Roasted almonds - 1/4 cup
- Orange pieces deseeded and without the skin - 10 to 12 pieces
- Roasted Walnuts -1/2 cup
- Green Apple - 1/2 cup
- Home-made Cottage cheese or feta Cheese-1/2 cube
Ingredients for dressing:
- Olive oil -1/4 cup
- Cranberries -1/2 cup
- Red wine vinegar - 2 tbsp
- Honey/Maple syrup -1 tbsp
- Lemon Juice - 1/2 tbsp
- Lemon Zest - 1 tsp
- Salt to taste
- Freshly pounded peppercorns -1/2 tsp
Process
- Take the kale in a deep bowl and sprinkle some salt and 1 & 1/2 tbsp olive oil and mix it really well with your fingers gently. Refrigerate this till the salad is ready to be served.
- Heat 2 & 1/2 tbsp olive oil in a pan and add some crushed peppercorns to it.
- Now add the red wine vinegar, cranberries, honey, lemon juice and the lemon zest to the pan and cook for 1 minute. Add some salt to this and switch off the flame and allow it to cool completely.
- Now take the chilled bowl of kale and mix in the fruit muesli, cottage cheese, green apple, walnuts and the almonds.
- Now pour the cooled down dressing and toss the salad.
- Plate the salad into a bowl/plate.
- Garnish with parmesan cheese, avocado, orange pieces and some more muesli.
- Serve immediately and enjoy this wholesome power packed salad meal.
