Nutty Gulkand Delights

A modern and healthy take on the delightful delicacy from ancient Mughal times. Bite-sized healthy alternatives to laddoos and barfis! Try this fusion of healthy and desi sweetness to bring joy to all festivities at home.

Ingredients:

  • Paneer made with 1 litre full cream milk 
  • Gulkand - 2 tbsp
  • Hung Curd -2 cups 
  • Nuts & Seeds Muesli – 1-2 cup
  • Powdered Sugar - 4 tbsp
  • Vanilla essence -1/2 cup
  • Sliced & roasted almonds -2 tbsp
  • Pumpkin Seeds roasted - 1 tbsp
  • Sunflower Seeds roasted - 1 tbsp

Process:

  1. In a deep bowl take freshly made paneer with the water completely drained out.
  2. Add the powdered sugar and the vanilla essence to the paneer and mix well with your palms. You can also do this in a mixer for smooth consistency. 
  3. Make a small ball of this mix and stuff some gulkand into it. Make balls in the same way till you have exhausted the mixture and keep aside.
  4. Take the hung curd and the muesli and grind coarsely. Chill this for a few hours.
  5. To serve, take a bowl and first put the ground curd mixture, top with a tbsp of muesli and then the stuffed gulkand balls.
  6. Garnish with the sliced almonds, pumpkin seeds and sunflower seeds and serve immediately.
