Chocolate Cheesecake

A dessert that fulfils your chocolate cravings while keeping your nutrition in check. Perfect for all, big and small celebrations, this cheesecake will sweeten up your day! Make it a cake-day and devour this decadent treat.

Ingredients 

  • 1/2 cup melted butter or applesauce
  • 250 grams low carb digestive biscuits or Marie biscuits
  • 250 grams chocolate muesli
  • 150 grams dark chocolate chopped
  • 75 grams whipping cream chilled
  • 150 grams Greek yogurt
  • 250 grams cream cheese at room temperature 
  • 55 grams powdered sugar 
  • 4 tbsp maple syrup or Honey
  • 1 tsp Vanilla essence 

Process

  1. Crush the biscuits and the muesli in a mixer till coarsely ground. Take butter at room temperature in a deep bowl and add the biscuit crumbs to it.
  2. Mix really well till the mixture is well combined.
  3. Take a springform pan and place a piece of parchment paper in between the bottom and the rim of the pan. This is optional as it just helps to remove the cheesecake when set.
  4. Press the muesli and biscuit crust mixture firmly into the bottom about 1 inch thick, evenly. Set aside in the freezer for 15 minutes.
  5. Meanwhile in a medium bowl, combine the dark chocolate and 1/2 cup of the cream.
  6. Microwave in 20-30 second intervals on high, stirring well each time until melted and smooth. Set aside to cool.
  7. In another deep bowl beat the cream cheese with an electric beater until smooth. Add the powdered sugar, chocolate muesli, vanilla essence and the melted chocolate. Mix well till properly combined.
  8. Pour this mixture over the biscuits and let it sit in the freezer for an hour and then in the refrigerator for 5-6 hours.
  9. To serve, keep outside for 15 minutes and then slice like a pastry. Garnished with chocolate muesli and chocolate shavings.
