Ingredients
- 1/2 cup melted butter or applesauce
- 250 grams low carb digestive biscuits or Marie biscuits
- 250 grams chocolate muesli
- 150 grams dark chocolate chopped
- 75 grams whipping cream chilled
- 150 grams Greek yogurt
- 250 grams cream cheese at room temperature
- 55 grams powdered sugar
- 4 tbsp maple syrup or Honey
- 1 tsp Vanilla essence
Process
- Crush the biscuits and the muesli in a mixer till coarsely ground. Take butter at room temperature in a deep bowl and add the biscuit crumbs to it.
- Mix really well till the mixture is well combined.
- Take a springform pan and place a piece of parchment paper in between the bottom and the rim of the pan. This is optional as it just helps to remove the cheesecake when set.
- Press the muesli and biscuit crust mixture firmly into the bottom about 1 inch thick, evenly. Set aside in the freezer for 15 minutes.
- Meanwhile in a medium bowl, combine the dark chocolate and 1/2 cup of the cream.
- Microwave in 20-30 second intervals on high, stirring well each time until melted and smooth. Set aside to cool.
- In another deep bowl beat the cream cheese with an electric beater until smooth. Add the powdered sugar, chocolate muesli, vanilla essence and the melted chocolate. Mix well till properly combined.
- Pour this mixture over the biscuits and let it sit in the freezer for an hour and then in the refrigerator for 5-6 hours.
- To serve, keep outside for 15 minutes and then slice like a pastry. Garnished with chocolate muesli and chocolate shavings.
